Red Cabbage Slaw

We are doing a CSA this summer and we got a whole head of cabbage...this was my solution! We did this first as a salad side, but honestly it was much better on BBQ sandwiches!
 
Modified from Real Housemoms

1 red cabbage, thinly sliced (I sent it through my food processor)
1 cup cilantro, chopped (or I used a handful of dried)
4 medium carrots, shredded
2/3 cup rice wine vinegar
1 tbsp sugar
1 tbsp honey
2 tsp salt
2 tsp pepper
 
Mix the shredded cabbage and carrots. Mix the dressing, then toss with the shredded cabbage mixture.  Let sit for at least an hour before eating.
 
Serves 8-10.
