Rhubarb Muffins

I kind of expected these to be bad....they were super good!  And my father loves them!

So the "Grandma Rose," is my sister-in-law's great-grandmother.  She gave me a copy of their family cookbook (her grandparents typed it up) and I'm excited to try things!  Since I have an excess of rhubarb, this is where I started. 

Rhubarb Muffins
Modified from Grandma Rose
3 cups finely diced rhubarb
1 cup brown sugar
2 tbsp flour
3 cups flour
4 tsp baking powder
1/2 cup sugar
1/4 cup oil
3/4 cup milk
2 eggs

Mix rhubarb, brown sugar and 2 tbsp of flour together and set aside.  (You can add nuts...there were nuts in the recipe....which I ignored. If you want them, add 1/2 cup finely chopped walnuts.) 

In another bowl, mix flour, baking powder and sugar.  Then combine milk, oil and eggs separately.  Add to flour mixture, stirring enough to moisten.  Add rhubarb mixture.

Bake at 400 for 25-30 minutes. 

Makes 1 dozen muffins.
