Creamed Chicken with Tarragon

This was tonight's dinner and both Ray and I liked it. It is a great use of leftover chicken (or turkey would work) and VERY easy, yet tastes like it cooked much longer! Definitely a winner!  I just got this cookbook and was excited that the first recipe turned out.  I've had some issues with RR as her recipes often contain such weird (and often overpriced items) and are usually just a little too involved anymore it seems. I actually "traded" this book (Title Wave in Anchorage....awesome used bookstore!) for Book of Burger by RR, which really disappointed me.  I wanted cool BURGER recipes and that was mostly basic burgers with added sauces....I don't want to make various sauces. When I make a burger, I want to make a burger, have Ray grill it, and be done! That's the point of burger night in my house. :)  No cooking.  Therefore I don't want some complicated stovetop sauce, which is what 90% of the recipes were. 

Creamed Chicken with Tarragon
3 tbsp. butter
2 tbsp. flour
1/3 cup white wine (I used a Chardonnay....Freddie's let you buy individual little bottles of wine out of the 4 and 6 awesome!  That means I don't have a ton of leftover wine now and it was only like $2 for a decent wine!)
1 1/2 cups chicken stock (I used bouillon)
salt and pepper
1 pkg frozen mixed vegetables (she used frozen peas and canned pimentos)
1/2 cup half and half (they used heavy cream...I had half and half and it worked great)
3 tsp dried tarragon (they used fresh, 3 tbsp., I used dried)
1 tbsp. Dijon mustard
1 1/2 lbs cooked chicken, diced
white bread for tasting with butter (we used leftover hoagie rolls)

In a s saucepan, melt butter over medium heat.  Whisk in flour and cook for 1 minute.  Whisk in wine and cook for 1 minute.  Whisk in the stock and cook until thick enough to coat the back of a spoon.  Season with salt and pepper.  Stir in frozen vegetables and half and half and return to the bubble.  Mix in a tarragon, Dijon mustards and chicken. 

Toast the bread and butter liberally.  Ladle chicken over it and serve.

So seriously, coolest thing bottles for cooking!  YAH! Since we don't drink wine, this is SO cool for us. This also works on other alcohols, again since we don't drink, this is great!
