Chicken Caesar Pitas

I took a recipe I saw on Paula Deen's show and went with Caesar wraps over her more Mediterranean take, just used her marinade, which we really enjoyed.

Chicken Caesar Pitas

Modified from Paula Deen

3 boneless, skinless chicken breasts (about 1 1/2 pounds)
3 tablespoons lemon juice
3 tablespoons soy sauce
1 clove garlic, minced
1 teaspoons dried oregano
Romaine lettuce
Caesar dressing [we used bottled, you could make your own]
shredded Parmesan cheese
pitas [or wraps...we actually thought the pitas were too heavy and so will use wraps next time]

Rinse the chicken breast and pat dry. Combine 3 tablespoons lemon juice, soy sauce, garlic and 1 teaspoon of the oregano in a glass dish. Add the chicken, turn to coat, and cover with plastic wrap. Allow the chicken breast to marinate for 30 minutes at room temperature or overnight in the refrigerator.

Grill or bake the chicken [I ended up baking it]. Slice the chicken and make the Caesar salad. Then add chicken and put in a pita or a wrap to serve.

Serves 6.

Chili Con Carne

I made this for a friend's on Tuesday and it was a hit. Ray just loves it!

The Fanny Farmer Cookbook

4 tbsp oil
2 onions, chopped
6 cloves garlic, minced
3 lbs beef chuck, diced
1 tsp salt
4-6 tbsp chili powder [I used ancho chili powder here as I had it left over from my mole chili]
1 tbsp cumin
1 tbsp oregano
cayenne pepper to taste [which for me isn’t a lot]
4 cups beef broth [I used bouillon cubes]

Heat oil. Stir in onions and garlic and sauté then add beef and cook until browned with salt. Add spices and cook for 5 minutes. Add beef broth and simmer, partially covered for 2 hours.

Serve with rice and/or beans. [I just did rice as I hate all beans but green beans].

Red Velvet Cake

Ray and I watched Bobby Flay do a Red Velvet cake throwdown and I decided I had to try it. It was good and a fun, different, cake, although I don't think I'll make it much. More of a novelty for me than anything.

Red Velvet Cake

Modified from Paula Deen (cake and frosting)

2 cups sugar
1/2 pound (2 sticks) butter, at room temperature
2 eggs
2 tablespoons cocoa powder
2 ounces red food coloring [this is a LOT and I think I could do without such a red is two bottles as you can normally get them only as 1 oz bottles]
2 1/2 cups flour [she used cake flour, I just used all purpose flour as my grocery store doesn't sell cake flour]
1 teaspoon salt
1 cup buttermilk [remember you can make these - 1 tbsp of lemon juice plus the rest of cup as regular milk]
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 tablespoon vinegar

1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar
Chopped pecans and fresh raspberries or strawberries, for garnish [I didn't use any of this]

Preheat oven to 350 degrees F.

In a mixing bowl, cream the sugar and butter, beat until light and fluffy. Add the eggs one at a time and mix well after each addition. Mix cocoa and food coloring together and then add to sugar mixture; mix well. Sift together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk. Blend in vanilla. In a small bowl, combine baking soda and vinegar and add to mixture. Pour batter into 3 (8-inch) round greased and floured pans [do make sure to grease/flour good or it won't come out..I also only had two matching so I had to improvise the third...not sure you really need three layers, but if you do only two, the cooking time will change]. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Remove from heat and cool completely before frosting.

Once the cake is cooled, make the frosting. In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Michigan Weekend

We've been in Michigan this weekend. The boys are having an awesome time with their PaPa! Adam has got "Pa" down pat! Andrew just likes everyone! We went to Brown's 50th anniversary - its the local Coney Dog place - today. It was very crowded, but Dave took the Oldsmobile! He and Adam showed it off while Ray and I waited in line (Andrew, too). Overall, we've been lucky on weather this weekend, with only a few thunderstorms that have quickly passed.

First Shopping Trip

I survived my first solo shopping trip with both boys! Andrew slept and Adam was a perfect little angel! I don't expect that to continue, but I'm happy with the first time.

Adam is also improving in talking. He's been really good on understanding for months (seriously, you can give him complex commands and he's gets it), but not talking much. This is mostly us - we know what he means and since he doesn't go to daycare, he hasn't had to learn quickly. He's been mimicking good lately. You ask him - do you want to eat and he says "yah, eat." Now after Mass on Sunday Ray was asking him if he was ready for lunch. He was doing his normal thing, but then Ray asks him what he wants to eat and usually he doesn't tell us anything specific, but Sunday told us - hot dog! He got one.:) Today after shopping he told me he wanted fries! He's improving!

Birth Certificate

Andrew's birth certificate is finally ready - we'll be picking it up on Friday. This will make our insurance happy!


So Ray noticed today that our garbage disposal is an "insinkator" - anyone know what that is so funny to us?

Dealing with insurance is SO much fun....

So remember that dental infection? Well, I thought it was sinus or something, so went to the regular doctor. But since they listed it as "dental," my medical insurance says it isn't covered. Now normally I'd fight them, but with a new baby, I just don't have the energy to do it. Added to the fact that I'm more concerned they pay the hospital bills. Added to that Andrew still isn't offiical until I get a birth certificate, so I don't want to start anything . So I'll just pay it (it isn't that much in the overall scheme of things....I'd be fighting it if it was). But the doctor has never sent me a bill. So I call them today because well I don't want late fees or something....turns out they have a new system and are months my bill still hasn't been will eventually. Well, I don't mind putting off bills, but really - get caught up people! And yes, I know why call them if they haven't sent me one? Well, I don't want them to try to charge me late fees plus I'm overall honest.

Now back to insurance and Andrew. We have a social security number, but that isn't GOOD enough for them...they have a birth certificate. Now the federal government can get a SSN in 2 weeks. Why does it take the local goverment MONTHS to produce a birth certificate? I'm going to start calling tomorrow, but, based on Adam, it will take another month for them to actually DO anything. Then I'll have to go to downtown Akron to get it where there is no parking except in the back and their back doors are locked....tell me this makes sense! So you have to park in back and then walk all the way around the building. At least there won't be two feet of snow like getting Adam's!

Adam Update

Well, the doctor measured and weighed Andrew, so I decided to do Adam myself Adam is 35 1/2 inches tall (so almost 3 feet tall!) and 29 pounds!

902 Story

First, the title - my father hates diapers in all forms, most particularly poopy diapers, hence he's nicknamed them "902"s. Just pee is a 901.

Now all parents understand that poop is an important discussion as babies can't tell us what is wrong, but their poop/pee often does. Adam was one of those kids you were always asking IF he'd pooped as he wasn't that regular as a baby. Andrew, though, it is more - does he ever stop? Seriously that kid can poop!

Now this morning, he had a big one and Ray was changing it. Well, he gets him cleaned up is almost done when he poops again. Ray had the new diaper in place, so that was okay. So he starts cleaning again....and Andrew starts peeing in his own Ray grabs a diaper to put over that. Well, in this process, he didn't have a diaper under Andrew's butt...yep THIRD poop....all over the changing table and his clothes! We finally got him (and everything else!) cleaned up after that!


Andrew is now 21 3/4 inches long and 10 lbs, 12 oz. He's gained almost 3 lbs since birth! Doc says he's doing great overall - yeah!

Funny Book

I enjoy the site Awful Library Books, which shows books that should have been LONG ago weeded. This is quite a gem! A book for kids to research if they should drop of high school! Compete with worksheets for homework! I have to agree with the blog authors - this particular book's auther certainly never considered the audience....they are dropping out o avoid reading and homework! I get the point - think about the long term consequences - but this isn't the way to reach the students you need to! It's also 20 years old, which never helps as teenagers do NOT check out books that look "old" and given I was still in ELEMENTARY SCHOOL when this was written......

So if you are looking for a laugh (a couple though seriously scare me that they are on the shelves...most are just of child rearing for last week made me super upset as it recommended whipping INFANTS....the blog authors agreed it was a terrible book and I guess the "method" has even killed two kids...just horrible! Who ever BOUGHT this book for a library and then don't even get me started the evil minds who WROTE the book in the name of "religion" - yes, those evil people thought their method was "Godly" - and this is why religion gets a bad name. The blogger did say that these methods have led to Child Protective Services being involved, which makes me feel slightly better. I'm going to go kiss my kids.....), check out this site. Librarians - go weed your collections!

What's Up?

Mom, Dad and Grandma hit the road on Monday for home - it should take them about a week. We are looking for "normal" here as we adjust to the new baby and schedule. I started teaching summer classes yesterday and Ray is gearing up for his summer work project. He actually isn't teaching, but will be busy with more adminstrative type stuff. Weather has been nice here for the last day or two. Andrew currently has the sniffles and Adam is just exhausted from too much with grandparents!:) That's the good way to be exhausted! Anyway, he just needs to find his normal sleeping routine again and have some downtime. That's about it from here!
