Open Faced Turkey Sandwiches

This really isn't much of a recipe, but it is good. Just gravy, really - I use boxed stuffing (although I usually add sauted onions) and just mashed the potatoes, but Ray asked for itand it was quite yummy. And hey, Rachael Ray even made it on TV once:

Open Faced Hot Turkey Sandwich

2 lbs mashed potatoes (just make these the normal way)
Stuffing (I just make a boxed mix by their directions, add some onions and celery if I'm feeling particularly interesting)
2 tbsp butter
2 tbsp flour
2 cups chicken (or turkey if you have it, which I did today) broth
1 tsp poultry seasoning
salt
pepper
2 lbs roasted turkey breasts (you need about 8 slices, you can use thick cut deli turkey, but leftover roast turkey or a rotisserie turkey from the deli is much better...this time I got shaved deli meat and it was quite good...some smoked type)
4 slices bread

Cook and mash potatoes. Cook stuffing as well.

Meanwhile, preheat a skillet over medium heat to make gravy. Melt the 2 tablespoons of butter to preheated skillet. Whisk in flour and cook for 1 minute. Whisk in 2 cups of chicken broth. Add poultry seasoning, salt and pepper. Allow to thicken slightly. Put sliced turkey into gravy to warm it. Place a bread slice on a plate. Put stuffing on bread, then turkey on top of that. Put potatoes on the side. Cover everything in gravy.

Serves 4 (I just made enough for 2, although I had plenty of leftover stuffing as the box makes more....but we'll definitely eat that up!)

That sounds so good right about now! (as my stomach growls) :-p

Next time I have turkey dinner, I'll be sure to make these for lunch the next day !
