I don't know about you, but I LOVE casseroles. They are filling, yummy and very comforting. Now Ray doesn't like cream based ones, but I do, so I try to make more non-cream than I make cream based ones. So this week I made my Bacon Cheeseburger Pasta, which is tomato based and much better to Ray.
Bacon Cheeseburger Pasta
Modified from Quick Cooking
8 oz uncooked pasta
1 lb ground beef
1/2 medium onion, diced
salt and pepper
6 bacon strips, diced
1 can (10 3/4 oz) condensed tomato soup, undiluted
1 cup (4 oz) shredded cheddar cheese
2 tbsp barbecue sauce
Cook pasta. Meanwhile, in a large skillet cook beef, onion, salt and pepper over medium heat until the beef is no longer pink, then drain and set aside. In the same skillet, cook bacon until crisp, remove with slotted spoon to paper towels. Discard drippings. Drain pasta. Mix barbecue sauce with tomato soup. Mix soup mixture, pasta, beef mixture and bacon in a casserole dish. Sprinkle with cheese and cover. Put in a 300 degree oven for 15-20 minutes until heated through and the cheese is melted.
Serves 4-6.
This was originally a skillet dish, but I find it easier to bake and melt the cheese in the oven. Makes mixing easier as well.
Oh, and tonight we are making Steak and Fries Salad. I know it sounds weird, but trust me - its good!
