Sling at Restaurant

I just found out about these - slings for the infant carriers are restaurants!! Pretty cool, I thought. Grandpa says that if they don't have those, you can just upset a highchair as well. The things you learn....

Easter Cake

I made a cake for Easter and it turned out really well. It was a chocolate cherry cake that the original recipe made a Valentine's cake, but by just putting it in round pans, I made it an everyday cake!

Pasta Casserole

Our friend Mo brought us over a casserole right after Adam was born and it was really great, so I thought I'd share the recipe for it:

Baked Cavatelli
Modified from Mo

7 oz dried cavatelli [pick a pasta....this is just what they used]
12 oz Italian sausage links, sliced
3/4 cup chopped onion
2 cloves minced garlic
26 oz jar pasta sauce
10 oz shredded mozzarella
1/4 tsp black pepper

Cook pasta and drain. Cooke sausage, onions and garlic. Mix sauce, 3/4 of the cheese and pepper. Add pasta and sausage mixture. Stir to combine. Spoon into 2 quart casserole. Bake, covered, for 25-30 minutes. Uncover and sprinkle with rest of the cheese. Bake 5 more minutes or until cheese is melted.


I actually did some real cooking the other week!! I made Chicken Alfredo Stromboli, which I love. It was easy, but actually did require more than just turning on the oven or stove and waiting, so that made me happy.

Chicken Alfredo Stromboli
Modified from Cooking for 2

1 French bread baguette (5 oz)
6 oz boneless skinless chicken breast, cubed
1 tsp olive oil
4 tsp butter, softened, divided
1/3 cup mushroom, diced [you can canned if you want, I used fresh and sautéed them in butter first]
1/4 tsp salt
1/4 tsp garlic powder
1/4 tsp pepper
1/4 cup sour cream
1/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese

Place bread, cut side up, on an un-greased baking sheet. Broil 4-6 inches from the heat for 2-3 minutes, or until lightly toasted, then set aside.
In a small skillet, sauté chicken in oil and 1 tsp butter until juices run clear; drain. [I baked mine instead and then sautéed the mushrooms.] Add the mushrooms (or in my case, I added the chicken I had baked), salt, garlic powder and pepper; cook for 1-2 minutes or until heated through.

In a small bowl, combine the sour cream, Parmesan cheese and remaining butter; spread over bread halves. Top each with 2/3 cup chicken mixture. Sprinkle with mozzarella cheese. Broil for 1-2 minutes or until cheese is melted.

Serves 2.


I put away all my maternity clothes today!!! Felt SO good!!! And I put away all Adam's 3-6 month clothes as they are too short. He can wear 6 month or 6-9 month now. This boy is going to be tall!


We had a great Easter, which included Adam rolling over for the first time! Adam was a little angel and slept through Easter Sunday Mass - very impressive of him! I think Ray might have wanted to join him.:) Adam did really good on the drive up and down, but by the end, he was off schedule and pretty grouchy. He just needed to get home and get some normalcy. It wouldn't have been so bad, but we had several things back to back and it was a lot for a little boy. Adam actually is sleeping pretty good at night now and on a pretty good schedule, so that makes it much better for both Ray and I.

My grandparents get here tomorrow for a visit. They drove down from Alaska. I'm very excited and it is their first time to meet Adam, so I think they are very excited as well.

Ray and I are both very busy teaching and with Adam, that means little time to do anything else. But Adam is so much fun, it doesn't really matter.

Adam rolled over for the first time yesterday!!!!!!! I had told Ray that he was waiting to do it at Grammy and PaPa Weber's and he did! Ray and I both got to see him roll over, but actually Pat had just got up to check dinner - what a little stinker that Adam was! He rolled from his back to his front and then went back! What a strong little boy!

Two Month Check Up

Adam passed his 2 month check up with flying colors. He is how 24 inches (so 2 FEET TALL) and 12 lbs, 6 oz. He's in the 90% percentile for height! He's more mobile than he should be, but we knew that already. He know has to go back at 4 months (more shoots...yicky).

Adam's New Skill

So today Adam was hanging out in his bouncer and I was on the computer and I noticed he's lost binky (his pacifier), but wasn't crying so I left him alone. I turn back a few minutes later and binky is back in his mouth! Well, Adam's figured out that if he moves his head into place, he can suck binky back into his mouth! Of course, being a new mom (and a new dad...Ray was part of this as well), I had to watch him do it.:) It was pretty neat.:)

Why can't people learn to drive?

People really can't drive...we live in the darned SNOWBELT!! Why can't people here drive in snow? Even in AK, it seems half the people can't drive!

Things that need to be invented....

So when my mom and my mother-in-law where here, they both commented on things they wished they had when we were young. So I got to thinking about what might be around when Adam has kids. What I want is a burp-a-meter! Someone needs to invent one as I can tell when Adam's hungry, sleepy, etc, but is he done burping? Can never tell and that boy is SO gasy!

Quick Update

I spent the day grading exams and homework while Ray and Adam went drywalling. It was Adam's first construction job! [As a note, Adam stayed upstairs the entire worries about drywall dust.] I got a ton done at home, though, which was good because I had a PILE of grading that had to be done. I actually had a bunch of stuff scheduled for today, but it was all cancelled due to weather, which was a good thing for me.

We got POUNDED today...over a foot of snow. I took the trash out and put on my winter boots, but the snow went over them! Ray said he barely made it into the driveway tonight when he got home from the drywall party.

Adam and I went out last night to work on a scrapbook page for a surprise for a friend (everyone got one page to do and its going into one big book).

Adam Update

Adam is doing well. Still hasn't rolled over yet, but is getting closer all the time. He's VERY mobile even without it. He can get all over the blanket on the floor! He's also really starting to coo well. I swear his cooing sounded like "hi" last night! That's just Mommy being Mommy probably. He's getting better with baths - we got through one (not the last one) without any screaming. He's also doing well with sleeping at night. He's not very good at napping during the day, but hey, I can live with that for now if he sleeps at night.

Warmed up a LOT here - snow melting everywhere. It is amazingly warm.

The doctor cleared me to do whatever I want last Friday, so I'm doing well and all recovered from the c-section.

Adam's baptism has gotten moved a lot, but is now scheduled for May 18th.

Term 3 just ended at SNHU, so I'm grading finals today. Term 4 starts today as well - I'm teaching two sections of 109 this time actually. I'm going to be teaching 110 in Term 5. Definitely getting busy! I'm in the middle of two classes for Lake Region as well. I'm teaching one class for them over the summer and then three in the fall (I got a 8 week section of Math 102 to go with my 16 week section). Keeps me busy and I'm actually making pretty good money, but I don't have to dress up or commute and I get to stay home with Adam. I'm very lucky!

I'm going back to giving tours next week. I'm very excited about that. Ray is busy at work, but since he's still teaching night classes, has been going in a later each day so he can take part of the Adam night shift.
